Grilled Portobello Mushrooms with Fresh Mint Pesto

Instructions

  1. Preheat grill to medium-high heat.
  2. Clean and slice portobello mushrooms.
  3. Season mushrooms with salt and pepper.
  4. Grill mushrooms for 6-7 minutes on each side or until tender.
  5. For pesto, blend mint, basil, garlic, pine nuts, cheese, olive oil, lemon juice, salt, and pepper until smooth.
  6. Slice grilled mushrooms and top with fresh mint pesto.

  • 2 lbs portobello mushrooms
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves
  • 1 head garlic
  • 1 cup pine nuts
  • 1 cup parmesan cheese, grated
  • 1 cup extra virgin olive oil
  • 1 lemon juice
  • 0.5 tsp salt
  • 0.5 tsp pepper
